MASHED TATER SALAD

Amount Measure Ingredient -- Preparation Method

1/2 cup celery -- 1/4" slice
1/2 cup red onion -- diced 1/4"
6 slices bacon -- crisp, chopped
1 cup mayonnaise
1/4 cup mustard -- Creole style
3/8 teaspoon Louisiana hot pepper sauce
1 tablespoon Cajun seasoning
2 quarts mashed potatoes -- cold
Combine first 7 items well. Break up the mashed potatoes so that there are still some lumps. Gently combine so that lumps of potato remain.

3 cups macaroni -- dried
2 pounds ham -- diced
2 pounds broccoli -- fine dice
1 quart cream sauce -- cold
1/2 gallon cheddar cheese -- grated
Boil macaroni al dente. Drain and cool. Mix all ingredients well. Butter and flour a large casserole dish. Cover with foil and bake at 350 for 45 minutes. Remove foil and bake for 10 min.
