Crazy Corn Recipe

You will need...
Small amount of olive or cooking oil and butter.
3 cups of corn
1 cup of mayo
2 cups of shredded Monterey jack cheese
1 red bell pepper
2 green bell peppers
1 large white or yellow onion.  (Don't use red, they turn grey when cooked and look nasty).
2 jalapenos
1 habanero if you dare.  (Exclude if you don't want to breathe fire).

Chop the vegetables (except the corn) into small bits. Keep them in separate piles.

Pour a small amount of oil into a deep skillet. Pour in the corn.

Cook the corn until the outside of the kernels are a very light brown.

Pour cooked corn into a bowl and add 1 cup of shredded cheese. (This leaves one cup remaining).

Back to the skillet. Add a tablespoon of butter and a drop of oil. Now add the onions, bell peppers, and chopped jalapenos.

Cook until onions are opaque. Once done, add to bowl of cooked corn and cheese.

Add another half cup of cheese and cup of may to mixture and stir up ingredients.

Pour mixture into a oven cooking dish and spread evenly. Use remaining cheese to sprinkle over top of mixture.

Heat in oven at 375 degrees for 15-20 minutes.

Enjoy.

PS - I was born in Dallas and raised in Houston.  I lived in Austin during my college years and I moved to AZ in 2002.   I miss good TX cooking and your CFS reminds me of ice-houses, rodeo's at the Astrodome, and TX pride.
