Olive oil: cover bottom of pot (1/8 to 3/16 cup)
Heat the olive oil on low heat, adding pork.
Reduce heat when the zucchini is added.
Cook covered until the zucchini has disintegrated, about 30 minutes.
Scrape the corn kernels off the cob into the pot, add seasonings, bouillon, and peppers and simmer for 20 minutes.
Adjust seasoning.
Serve with hot corn tortillas and salsa.
