Carne De Puerco Recipe

  1.  Measure                         Ingredient
    ------          -------           --------------------------------
       1/4            cup             olive oil
       3               pounds        pork, cubed
       3               medium       zucchini, peeled down to the flesh and cubed
       2               ear             white corn on the cob, split the kernels with a knife
                                           to taste    salt and pepper
       1               tablespoon    onion powder
       1               tablespoon    garlic powder
       2               tablespoons    chicken bouillon paste
       8               small             serrano peppers, pricked with a fork
                        corn tortillas
                         salsa

Olive oil:  cover bottom of pot (1/8 to 3/16 cup)
Heat the olive oil on low heat, adding pork.
Reduce heat when the zucchini is added.
Cook covered until the zucchini has disintegrated, about 30 minutes.
Scrape the corn kernels off the cob into the pot, add seasonings, bouillon, and peppers and simmer for 20 minutes.
Adjust seasoning.
Serve with hot corn tortillas and salsa.
