7     ounces  (1 bag)   fideo (vermicelli)
1     ounce                  butter
2     cups                    boneless chicken thigh meat-cubed
1 1/2 cups                  onion -- julienned
1     tablespoons        garlic -- minced
1     cans                    Ro-Tel tomatoes
2     cups                    chicken stock
1     teaspoon            oregano -- whole
2     teaspoons          cumin -- whole
1                                chipotle pepper
Fry fidello in melted butter til golden.  Add onion and garlic and saute briefly.  Add chicken and cook for 3 minutes.  Add rest of ingredients and cook over moderate heat til done about 30 minutes.  Serve topped with sliced green onion and grated cheddar.
