TEXAS Caviar
3 cups black eyed peas-canned, drained and washed
1/2 cup diced red onion
1/4 cup diced bell pepper
1    tablespoon minced garlic
3    tablespoons olive oil
1    tablespoon lemon juice
1 tablespoon red wine vinegar
1/2    teaspoon ground cumin
1/4 teaspoon salt
1/2 teaspoon black pepper
1/2    each chipotle pepper
3/4 cup diced tomatoes
Mix first three items well in a bowl.  Add the garlic, olive oil, lemon juice, vinegar, seasonings and chipotle pepper to a blender cup and blend on high for 30 seconds.  Pour oil mixture over the peas and vegetables and lest rest for 3 hours.  Add tomatoes right before serving with tortilla chips.
Makes twelve servings.
