Sausage Stuffing Dressing

2 lb      Sourdough bread
4          stalk Celery
1          Onion
1 Tbs    minced garlic
1 tsp    whole thyme
1 tsp    whole rosemary
2 cup    sliced mushrooms
1 lb       hot country sausage
1 qt      chicken stock
1 cup    1/2 & 1/2
4           eggs
1 tsp     black pepper

Brown sausage in a large skillet.  Slice celery and julienne onions, add to the pan and cook until limp.  Add garlic and cook for one minute.  Add mushrooms and cook until done.  Add stock, seasonings and cream and simmer for 10 minutes.  Pour over stale bread, mix and cover for 30 minutes.  Add beaten eggs and mix well.  Pour into a buttered casserole dish, cover and bake in a 350 degree oven for 45 minutes.  Remove the cover and cook for an additional 15 minutes until the top is lightly browned.
